WIAW Good Habits #3

I missed week two of Jenn’s weekly linkup, but I am back with my eats and some recipes. Thanks to Jenn for hosting!

Warm oats are ba-ack! It was chilly this morning, so I fell back into this healthy fall habit. In the mix: 1/2 cup oats, 1 1/2 cup water, spoonful of chia seeds, a banana, half a scoop of Plant Fusion protein powder, a splash of coconut milk, and a little peanut butter. Quite the concoction!

Last week, Jenna posted a recipe for meat sauce, and it made my mouth water. I have never made spaghetti sauce from scratch like this, and it sounded like a great way to spend a Sunday afternoon. It turned out awesome! Everything I have ever made from Jenna’s blog is fantastic, and I want to read her book. Anyways, today, for the second day in a row, I had it for lunch. For a little sweetness, I ate a nectarine and then a mini Reese’s peanut butter cup.

After school every Tuesday, I run three miles with a few teachers, and this pumpkin muffin was my post-workout snack. My running/carpooling/teaching friend used this recipe but only used one cup of sugar (three cups is a CRAZY amount) and a half cup of applesauce and a half cup of oil.

Before heading home, I worked up an appetite doing domestic crap like picking up clothes from the dry cleaners and swinging by the grocery store. That muffin was not holding me over until dinner, so I polished off the last half cup of vanilla chocolate chunk Chobani.

Brody chose tacos over fajitas. I made a big old taco salad – yah for veggies! Actually, I kind of forgot there were vegetables in Jenna’s meat sauce. I didn’t do too bad on the veggie-front today. Later on I also had a handful of green grapes and some chocolate chips with sunflower seed butter.

WIAW Good Habits #1

NOW it’s September (remember how I was confused last week?). School has begun and I am back in a routine. No more morning couch time, no more 8:30am workouts, and no more eating whatever I am in the mood for. Instead I often pack at least two meals and two snacks the night before and I have to squeeze my workout in before the sun is up.

BUT…I am okay with that. Packing food the night before ensures I have healthy, well-balanced meals and getting my sweat on in the morning gives me more energy throughout the day. I think those definitely qualify as fitting into Jenn’s September theme of falling back into good habits.

We had an odd schedule for the first day and I had to eat early. I wasn’t especially hungry but knew I wouldn’t have free time in the afternoon. Obviously I forgot to take a picture but I had a sandwich with turkey, dill jack cheese, and quarter of an avocado.

Again, no picture. A hard boiled egg was eaten as a pre-run snack.

The teacher I carpool with (the one with the new car) gave me a muffin his daughter had made – it was delicious!

Post-dinner, the dogs and I walked a couple laps at the park. I was happy I waited until the temperature had dropped. After my hallway run and the dog park, I needed a shower and later another snack. The last cup of Peanut Butter Cheerios was consumed around 9:00pm. These things are amazing!

WIAW Summer Staples #4

This morning, I went on to Jenn’s blog to see what the new theme was for September…but guess what? It’s still August! That means it is still summer staples. Good times.

This meal, which was definitely a summer staple for me, was eaten in the car on my way to work. I need to buy supplies for overnight oats because this was difficult to eat while driving. Yup – not safe.

Snack @ 12:00pm
At our first in-service day of school, we had a long meeting that started at 10:00am. I failed to eat a little something before and was starving by noon and had to pee like nobody’s business. Looks like I’ve got to train my bladder again. Anyways, I grabbed a handful of mixed nuts from an emergency stash I keep in my gym bag.

Over what would’ve been a lunch break, I ran a few miles with two coworkers. We’re going to try to run one day a week, probably three miles, after school. While it was fun to run with new people, running at noon on a hot, sunny day was not very fun.

I came back sweaty and hungry. So hungry, in fact, that I didn’t even think to take a picture of the massive salad, yogurt, and handful of Starburst candies I ate. Whoops.

This snack bag was consumed before a trip to the dog park with my friend Jena and her pup Ruger. These have become a staple in our house because every box has a coupon on the inside: $1.50 off two boxes. I wait until they’re on sale and then only spend $2.25 per box. Feel free to call Extreme Couponing to nominate me to be on the show.

I cut up a chicken breast into small chunks, bathed them in an egg bath, and dunked them in a pool of garlic breadcrumbs (P.S. Do you like all of the water imagery I used there? My brain is back in school mode.) They baked for fifteen minutes. On the side were packaged Alfredo noodles, sautéed Swiss chard (from my garden!), and a side of BBQ sauce. I did pretty good with my greens today!

So this happened, but it was basically meant to happen. You see, after dinner Brody and I were about to watch an episode of Sons of Anarchy when I was thinking how we hadn’t had Dairy Queen for a while. No joke, ten seconds later, Brody proposed going for a treat after the episode. He was reading my mind! Or, most likely, he just knows me really well and recognized there wasn’t much to eat for dessert in our house. I had a medium hot fudge sundae and loved every bite of it. Brody had an Oreo cheesequake Blizzard.

This has become a summer staple for me: peanut butter toast with chia seeds. I rarely have toast during the school year because overnight oats are just so much easier. For more staying power, I had a strawberry banana Chobani. Although you can’t see it, I also had an iced coffee with skim milk.

I drove to school to meet with a couple of my colleagues for a little curriculum work. It went awesome and I was so happy with what we developed! Time flew by and it wasn’t until 11:30 that I noticed my stomach growling. I ate cut up cantaloupe.

Driving back home and to a doctor’s appointment, I ate lunch in the car: pork and chicken sausage and roasted green beans.

The sausage was an item Brody actually chose while shopping at Woodman’s on Saturday. The stats are better than normal sausage with 200 calories, 15 grams of fat, and 16 grams of protein per link. They have great flavor and would be delicious in a pasta dish.

Lunch didn’t keep me satisfied, so I had half a Flatout light wrap with TJ’s peanut butter.

Yah for kombucha! I love this stuff, but sadly this was the last one in my fridge. The trilogy flavor is one of my favorites. This quenched my thirst after an afternoon trip to the dog park. Now that Woodman’s is so close and the prices are the cheapest, I see kombucha being more of a year-round staple.

Yup, three small snacks in one afternoon. A friend and I ran three miles, and I knew we wouldn’t be eating dinner right away. That other half of the Flatout wrap? Ate that with more peanut butter.

Dinner @ 7:30pm
My pizza had spinach, green onions, tomatoes, red pepper, goat cheese, a little mozzarella, Garlic Gold Italian Herb seasoning, and DiSalvo’s pizza sauce (seriously the best sauce ever). My crust was naan. I ate it all.

For dessert, I polished off the last half cup of triple espresso gelato I picked out at Woodman’s. This flavor was so amazing – very intense coffee flavor and super creamy.

WIAW Summer Staples #2

Wednesday already? In the summer, I often wish the weeks went by slower, but in a few weeks, I will be changing my tune. At least I have a party to look forward to. Tonight I am hosting a Pampered Chef and Thirty-One party (I’ll have pictures and recipes, including one for a super easy tres leches cake, of it tomorrow) for a friend who recently had a baby.

I’m getting ahead of myself, and instead of the future, we need to talk about the past…specifically yesterday’s eats. A big thank you goes to Jenn over at Peas and Crayons and her creative theme, summer staples.

Warning: I could not, for the life of me, remember to take pictures before I started eating. At least I remembered, right?

This morning I made it to the dog park immediately upon waking and walked for an hour and fifteen minutes. I ate half a banana before and egg sandwich (sandwich thin, one egg, crumbled bacon, spinach, and a slice of Monterey cheese) and a banana and a half after. Bananas sounded good to me apparently!

I posted this recipe on Monday, and it makes a great leftover cold salad. All of those tomatoes are from my garden! The hybrid plant I bought combines the grape and Roma tomatoes and it is producing fruit like crazy. For a little sweetness, I finished the meal with about two cups of watermelon.

Around 4:00pm, I needed a snack, and apparently some sugar. Oops! It would’ve been rude to have served guests a dessert I hadn’t tested. Don’t worry….it’s good. Real good.

Brody had a meeting, so I was on my own for dinner. It’s been ages since I’d had tuna. I mixed one can of albacore tuna with a tablespoon of light mayo, chopped tomatoes, garlic powder, onion powder, and a little cracked pepper. My sweet tooth (as if I hadn’t had enough sugar already) was satisfied with a fabulously ripe mango, and because I am honest, another small piece of tres leches cake. Yup, it’s still edible. Just checking.

Around 9:30, my stomach started making noises. I probably could’ve gone to bed and been fine but I chose to have the last cup of Corn Chex with a little milk.

As for my summer staples, mangos are definitively in that category. I love mangos and credit them with helping me break my chocolate addiction/habit last summer. Tomatoes are also a staple, especially if I grew them. A fresh tomato slice on a BLT or sliced thick with a little salt – nothing like it. My only complaint is that the acid starts to get to me. Real world problems here.

That’s all she wrote, and ate. Have I made that joke before? If so, I apologize. It’s bad.

Rhabdo Update and WIAW

Good evening ladies and gentlemen!  It’s Wednesday but feels like Monday to me because I spent the last two days in the hospital with Brody.  Before I get to Jenn’s What I Ate Wednesday, a quick update:

Brody’s CPK numbers continue to go down, and there is a very good chance he’ll be coming home tomorrow.  Last night, his CPK was at 54,000 and once they are below 30,000, he can come home!  I was able to come home yesterday because my kind, generous, amazing grandparents drove up to Antigo from Appleton, picked me up, brought me back to the Madison-area, and then drove back to Appleton.  Although I felt horrible leaving Brody up there, I needed to get back to work; with only a handful of instructional days left, I have a lot to do and teach still.  I will say it is strange to be in the house without the husband or dogs – it’s so quiet and lonely!  I’m excited for everyone to come home tomorrow.

Food.  I love it.  I don’t share a lot of my daily eats here, and that’s why I love participating in Jenn’s WIAW – thanks again Jenn!  Today I tried to focus on veggies and protein.  I think I succeeded – score!

BREAKFAST: 
As I got ready, I sipped on an iced coffee with coconut milk.  So refreshing!

The food portion of my breakfast included a bagel thin, half with cream cheese and fig butter and the other half with sunflower seed butter and homemade jam.  I polished off the fruit in the car during my drive.

SNACK:
I inhaled this yogurt and forgot to take a picture until it was in the trash.  There’s your proof: I ate a black cherry Chobani.

LUNCH:
My mom had cooked up chicken and ground beef for nachos grande (basically loaded semi-healthy nachos) and sent all the leftovers home with me.  I made a salad with romaine lettuce, half a tomato, chicken, black beans, and salsa as the dressing.  It was yummy and very filling.  I also had an orange and a few mini-chocolate bars.

SNACK:
On my drove home, I ate red pepper strips (no picture: driving + eating + camera = accident).  At home I needed a little sumpthin-sumpthin to hold me over until dinner and ate the whites of a hard boiled egg.  This is unpictured because I forgot.  You all know what eggs look like, so it’s all good.
DINNER:
With Brody gone and no meal to cook, I decided to clean out the freezer and finish the meatless chicken strips.  They have decent stats: two strips (small, IMO) were 100 calories and 8 grams of protein.  I ate four with BBQ sauce and then one more with honey.  I picked up a bunch of veggies and roasted a red pepper, yellow squash, and onion.

I will definitely be having something sweet before I call it a night.  Whether it be more watermelon, a brownie cupcake (made by Mom), or both, my sweet tooth demands satisfaction.

What I Ate Wednesday

Welcome to Friday…uh, I mean Wednesday. It feels like Friday to me because I am taking two personal days, so I am D-O-N-E for the week! A college friend is getting hitched, and Brody and I leave for Maryland tomorrow morning. Just to throw another wrench in the confusion of days, I recorded my day of eats yesterday, Tuesday.

As always, a big thank you goes out to Jenn for organizing WIAW. I always love browsing through a handful of new-to-me blogs, and once summer comes, I know I’ll be adding a few more to my Google Reader. Yah for summer break! I have less than twenty days, in case you were wondering. But onto my food!

BREAKFAST: Overnight oats

No surprise here. The standard mixture. It’s strange; sometimes I can go on the oats until lunch without my tummy rumbling and other times I am starving by 9:45am.

LUNCH: Salad and strawberries

This salad was the bomb, mainly because of the roasted veggies. Because I was too lazy to put salad dressing into a container, I brought the hummus and used that as dressing. Strawberries and a few unpictured mini-chocolate bars rounded out the lunch.

SNACK: Plant Fusion protein shake and granola

I wrote about this new liquid in my life yesterday. With a half cup of Love Grown Carrot Cake granola on the side, I was ready for a jaunt at the dog park with my friend Jena. This granola is SO good, and I find it difficult to not go back for more.

DINNER: Sandwich, mango, and two squares of TJ’s dark chocolate with sea salt

Because of a late meeting, Brody and I didn’t eat dinner until nine – very late for us. We threw together sandwiches and I finished my meal with frozen mango and two squares of chocolate. This gourmet meal was eaten while watching the finale of The Voice. I thought Juliet Simms with her unique and gritty voice was going to win, but no dice.

Not sure what my blogging opportunities will be like for the next four days, but you can bank on having a few posts about our trip to Maryland at some point. See you again soon!

What I Ate Wednesday

Hi folks! How is your Wednesday going? Mine is going quite well, except I did wake up to some odd sensations in my right knee and right hip flexor. I’m trying to be optimistic and be logical about it; I need to rest, ice the affected areas, and take some ibuprofen. As my 57 year old coworker/carpooler said, “When you run 18 miles, you should expect your body to respond in some way.” Good call, Dave.

Time for What I Ate Wednesday hosted by Jenn over at Peas and Crayons. April’s theme, extra cup of veggies, is motivating me to make good choices (at least on Wednesday) with my vegetables. As I’ve said before, I am great with my fruit intake but struggle with that other part of the pyramid…or plate…or whatever it is this year. Regardless, thanks to Jenn for organizing WIAW every week!

Last night when I took the pulled pork out of the freezer for dinner tonight, I noticed a lonely bagel in a drawer. Every year for Christmas, Brody and I go to Ohio to spend the holiday with his family, and there are certain food joints we tend to visit annually; Barry Bagels is one of them. This chocolate chip bagel tasted amazing toasted. I topped one half with light cream cheese and the other with TJ’s peanut butter. Realizing it was Wednesday, I snuck in a serving of veggies with a glass of Amazing Grass. I bought this last year and haven’t used much of it. It tastes okay but doesn’t dissolve well. Let’s just say the last sip is not a pleasant one (texture-wise). Although it isn’t pictured, I also had an iced coffee with skim milk.

During my prep hour, I stopped in another English teacher’s classroom to see how she helps her AP students prepare for the test. Later, between classes, I grabbed a few almonds and dried bits of mango to stop my stomach from eating itself.

At the grocery store on Sunday, I purchased some meat, including ground chicken. It has about the same stats as ground turkey, and I thought it’d be good to mix up our protein sources. Unfortunately, I had no idea what to do with the chicken, so I headed over to Allrecipes and found this. I had everything it called for, and while I do enjoy grocery shopping, all I want to do after work is get home. They turned out well and had good flavor. They’d be good with pasta and marinara or on a meatball sub. We ate ours with broccoli cheese noodles (from a package), and I had this exact same meal for lunch. I completely spaced out and failed to take a photo. For dessert I had strawberries and a few flavored Tootsie Rolls.

I tend to crave carbs after school, but to do a better job with my veggies today, I microwaved a small sweet potato and topped it with Greek yogurt. Then I remembered the pita chips from Trader Joe’s and finished the last serving as I graded quizzes.

Brody and I threw together a quick dinner of pulled pork sandwiches. I also had an apple to cleanse the palate.

Most likely I will have something sweet before bed, maybe a chocolate pudding pop or some dark chocolate M&M’s.  What I wish I had is Yogurtland.  Here’s a photo documenting my first (and only, so far) experience at this heavenly place.

P.S. The spacing of this post is totally annoying me.  I like it to be more organized and have spaces between the “ideas” (in this case, meals), but I haven’t figured out everything about WordPress yet.  I also wonder if it’s because I have an Apple.  I’ve heard Windows Live Writer is the best for writing posts, but that it’s not compatible with Apples.  Boo.

What I Ate Wednesday

Jenn’s idea for this month’s What I Ate Wednesday theme, extra serving of veggies, gave me the push I needed after eating such a bland (but delicious) Easter meal and too many Reese’s Peanut Butter Eggs (all Easter candy is 50% off!). Before I share my eats, many of which are green or heavy on the veggies (#veggievictory), I want to thank Jenn from Peas and Crayons for organizing this weekly food festival.

This image kills two birds with one stone; not only does it show my breakfast of overnight oats, but it also fulfills the Instagram Photo Challenge (where you ate breakfast). My oatmeal is very thick, especially since I used Fage Greek yogurt this morning. Often I do not finish my breakfast on the ten minute drive to my coworker/carpooler’s house and polish it off as a passenger. As for my oatmeal, here was my magic formula for today: 1/2 cup oats, tablespoon chia seeds, 1/2 cup milk, 1/2 cup yogurt, large scoop of pumpkin, one small banana, honey, pumpkin pie spice, and a dollop of sunflower seed butter. Does the pumpkin count as a veggie?

This snack happens in anticipation of future hunger. Because of my schedule, I do not have the ability to eat around 10:30am when my breakfast normally wears off. I stick to high protein snacks, like this string cheese stick (which I eat the “wrong” way), almonds, or a hard boiled egg. No picture was taken of this because I ate it while walking down the hall after a meeting two minutes before third hour started.

When my mom, sister, and I were out running errands Monday morning, we swung by Aldi’s. Once again, I left with lots of produce. Two of the green goodies I picked up, green beans for 59 cents (I kid you not!) and Brussels sprouts, were roasted last night. The pork is from last week; it had been frozen since Wednesday but I thawed a small Tupperware of it for our Cuban sandwiches. An unpictured pear satisfied my sweet tooth…until I can get home for a Reese’s Egg that is.

This afternoon I needed a snack before yoga, and this chocolate chip cookie dough Larabar totally hit the spot: protein, texture, and sweetness.

Dinner at 7:30pm
Brody requested a moderately healthy dinner, and knowing I had peppers in the vegetable drawer and chicken in the freezer, fajitas came to mind.

I used a liquid fajita sauce that had a very smoky flavor. I topped mine with Wholly Guacamole, Fage 0% Greek yogurt, and salsa. For dessert I had fresh pineapple and a Reese’s Egg.

I think I did pretty well with my veggies today. In general, I find it a lot easier to eat fruit, but since realizing how much I like roasted veggies, I am getting better.
