What I Ate Wednesday

Jenn’s idea for this month’s What I Ate Wednesday theme, extra serving of veggies, gave me the push I needed after eating such a bland (but delicious) Easter meal and too many Reese’s Peanut Butter Eggs (all Easter candy is 50% off!). Before I share my eats, many of which are green or heavy on the veggies (#veggievictory), I want to thank Jenn from Peas and Crayons for organizing this weekly food festival.

Breakfast at 6:45am

This image kills two birds with one stone; not only does it show my breakfast of overnight oats, but it also fulfills the Instagram Photo Challenge (where you ate breakfast). My oatmeal is very thick, especially since I used Fage Greek yogurt this morning. Often I do not finish my breakfast on the ten minute drive to my coworker/carpooler’s house and polish it off as a passenger. As for my oatmeal, here was my magic formula for today: 1/2 cup oats, tablespoon chia seeds, 1/2 cup milk, 1/2 cup yogurt, large scoop of pumpkin, one small banana, honey, pumpkin pie spice, and a dollop of sunflower seed butter. Does the pumpkin count as a veggie?

Snack at 9:40am
This snack happens in anticipation of future hunger. Because of my schedule, I do not have the ability to eat around 10:30am when my breakfast normally wears off. I stick to high protein snacks, like this string cheese stick (which I eat the “wrong” way), almonds, or a hard boiled egg. No picture was taken of this because I ate it while walking down the hall after a meeting two minutes before third hour started.

When my mom, sister, and I were out running errands Monday morning, we swung by Aldi’s. Once again, I left with lots of produce. Two of the green goodies I picked up, green beans for 59 cents (I kid you not!) and Brussels sprouts, were roasted last night. The pork is from last week; it had been frozen since Wednesday but I thawed a small Tupperware of it for our Cuban sandwiches. An unpictured pear satisfied my sweet tooth…until I can get home for a Reese’s Egg that is.

Snack at 3:45pm
This afternoon I needed a snack before yoga, and this chocolate chip cookie dough Larabar totally hit the spot: protein, texture, and sweetness.

Dinner at 7:30pm
Brody requested a moderately healthy dinner, and knowing I had peppers in the vegetable drawer and chicken in the freezer, fajitas came to mind.

I used a liquid fajita sauce that had a very smoky flavor. I topped mine with Wholly Guacamole, Fage 0% Greek yogurt, and salsa. For dessert I had fresh pineapple and a Reese’s Egg.

I think I did pretty well with my veggies today. In general, I find it a lot easier to eat fruit, but since realizing how much I like roasted veggies, I am getting better.

Ugly Runners Club

Happy Mond…errr, I mean, Tuesday! Not having school yesterday got me all out of sorts. At least if this continues, by Friday, it will feel like Thursday; just think how exciting that would be to think it was Thursday but realized it was Friday (credit for that observation goes to my teacher-friend, Joanna). I wish I could think of a smart, impressive analogy to that feeling, but I can’t.

Today’s photo challenge topic: cold

We have been spoiled this spring, and winter for that matter, and today’s temperature was only in the upper 40s. My lovely husband hung this time/thermometer thing, so I captured an image through the screen. At first I made this choice because my little tootsies would be cold on the deck, but then I realized the screen added an interesting element and dimension.

A friend on Facebook sent me this link, and I was honestly surprised I hadn’t seen it out there in the blog world yet.

This guy…seriously? That smile? That perfect hair? Who looks that put together during a race?

It made me giggle because during my long run, I spent a few moments questioning what I look like when I run. Because I mapped a route in a popular running and biking area, I passed by a lot of people (including a few people multiple times). I tried to look cool, relaxed, and happy, but I am sure my red, splotchy, salty face was contorted into all horrible kinds of expressions.

Luckily, evidence of my unattractiveness can be found on Facebook…like this picture my friend, Brad, took of me at the very end of the Haunted Hustle. Yes, I am comfortable sharing unattractive photos of myself with all of you. We are at that point in our relationship.

People probably look at me and think, “Ooohh, that girl is not meant to run,” and sometimes I agree with them. Not much about running is natural or relaxed for my body, but I still love it. Why is that?

With any challenge (Instagram Photo Challenge) or big decision (buying a house), there are risks involved and the potential for failure. Maybe the journey isn’t always pretty, like how I look running, but having a goal to work towards and the satisfaction after reaching it is worth it. Not all of my runs have been fun or pretty, but they make me a stronger person, and I am feeling really confident about running my first marathon. Does it matter that I am an ugly runner? Nope. So I plan to embrace it and create a new club: Ugly Runners Club, or URC (pronounced er-ck).

Instagram Photo Challenge

It is no secret that my photography skills are somewhat lacking. Brody is the photographer of the family, and I have relied on him to snap some of the amazing moments of our life.

Most of the photos I take are on my countertop; I lack creativity and variety. I hope this photo challenge will force me to step outside my very tight comfort zone. Many of the blogs I read post beautiful images and I feel a little embarrassed. Plus, this would definitely count towards Janetha’s Adventurous April.  She has prizes people!

Today’s theme: younger you

*This is EXACTLY why I am glad I am doing this challenge – I can’t even figure out how to rotate pictures in Instagram (on my iPad).  I thought I could do it on my desktop (also an Apple), but no can do.  I get frustrated easily with technology.  

I gave up on my dream of being a professional ballerina/dancer after my sophomore year of high school and turned to the dark side (i.e. cheerleading) for my junior and senior year. Last year at a cheer competition (I coached for two years), my mom arrived sporting these high school cheer buttons. Both pictures are from my senior year of high school. This was a fun time of my life when everything was so easy (obviously I didn’t realize that then). It seems like people either love or hate high school; I loved it, which is maybe why I enjoy teaching at a high school so much.

For my last day of Spring Break, I am working hard and being very productive lying on the couch watching HGTV. My laziness from yesterday wants to hang on. I haven’t been horizontal all day, though. My mom, sister, and I ran errands this morning and ate lunch (leftovers of course) together. After they took off, I brought the pups to the dog park and graded essays. BodyPump is next on the agenda, and I may squeeze in half an hour of elliptical before to get the blood moving.

Like many of you out there, we have lots of ham left. Brody had the genius idea to make Cuban paninis with pulled pork from last week and ham from yesterday. I also want to make scalloped potatoes with ham tomorrow or Wednesday night. If you have a good scalloped potato recipe, please share.
